transcribe what sounds good to you - things you wouldn't have thought of on your own - horns, piano, whatever...
the main reason to transcribe piano players is to learn how and when to use harmonizing.  certainly if you are looking at more bluesy piano, harmonization in your solos is essential, and so i would just transcibe piano players.

even jazz players that mostly play single note lines add bits of harmony in places, so i really think you will get the most from piano players.
most of the old timers swear they never transcribed other piano players... only horn players.
when you say old timers do you mean famous jazz pianists or just experienced jazz pianists in genral?
keith jarrett claims he has learned most of his be bop language from horn players like bird and rollins. i think we pianist should pay more attention to horn players. i have done some bird and rollins transcriptions and it surely is worth working with it. interesting thread....
my favorite solos are horn solos:)
and guitar solos:)
jasper i was refering to famous jazz pianists.
